Doris and Virginia's Swedish Meatballs
Every Christmas Eve before going to our traditional
Martin Family Christmas party we would go over to
my Grandma Doris' house for a Swedish smorgasbord dinner.
She always made Swedish meatballs.
The dinner included kipper snacks, various meats
and cheese, and Swedish cookies.
She always decorated it as fancy as she could
using items that she bought at the
Scandinavian Store in Scottsdale's 5th Avenue shops.
These dinners left an impression on me.
I loved this tradition and I hope that
I can continue it in my family.
Ginny's Famous Tamale Pie
When I was growing up our Martin family
always got together for birthdays and Christmas.
For these events my mom, Ginny, always
brought her famous tamale pie.
After the parties ended Ginny stopped making her tamale pie.
I have often been asked by family members for her recipe.
At 88 she did her best to remember how she made it.
This is the recipe that she wrote down for me.

Albuquerque, NM to visit my Grandma Doris.
While we were there she made us this recipe.
It became a favorite of mine.
It still is one of my favorite recipes.

good friend Barbara.
Alyssa loved it so much that it
is her favorite recipe.
She's tweaked it a little,
so we feel comfortable saying that it is hers.

Chase Chase Cookies
During COVID Disney shared
some of their recipes from the Disney Parks.
This Jack Jack Num Num Cookie Recipe quickly
became one of Nathan's family's favorite recipes.
Our cute little Chase loves them the most!
Alyssa's Easy Mini Chicken Pot Pies
This recipe is not Alyssa's recipe.
It is named for her because she loves pot pie so much.
It can be really expensive in restaurants
so I came up with this one.
The reason that I made them mini is because
I only felt comfortable placing the ramekin
in the oven to cook the crust.
After trying it, I loved the smaller size.
It's easy to serve with a salad or sandwich,
plus the kids can make their own.
Claudia's Super Easy Peppermint Bark
One year at a family Christmas party
we ran out of peppermint bark.
My sister-in-law, Claudia, had a recipe for peppermint bark
using the Nestlé's Chocolate Chips.
We were in a hurry,
so we just threw them on a cookie sheet, popped them in the oven, then sprinkled
the crushed candy canes on top.
They were fast, easy and really yummy to eat.
1. Spread out the peppermint chocolate chips on a foil lined cookie sheet. You will use about 2 bags of chips for a half sized cookie sheet, or 4 bags for a full sized cookie sheet.
2. Pop the pan into a 175 deg. oven. Keep on eye on it, they will melt in just a few minutes. Take them out when they start to melt.
3. While the chips are melting, crush about 5 candy canes in a freezer zip-loc bag. If you are doing a full sized cookie sheet you should crush about 10 candy canes.
4. When the chips start to melt, pull them out and lightly spread them with a rubber spatula until they are even.
5. Quickly spread the crushed candy canes over the top of the melted chips. You can carefully push in some of the bigger pieces with the rubber spatula.
6. When the peppermint bark is completely cooled, break it into pieces. If you are in a hurry, place it into the fridge or freezer.
Nathan's Coconut Rolls (Pani Popo)
My son, Nathan, served his
mission in Sydney, Australia.
While he was there a Samoan
family showed him how to make easy
coconut rolls,
or Pani Popo.
When he came home he made them for us,
and they have been a
family favorite every since.
They are so easy to make:
GM Ginny's Pulled Pork Sandwiches
Whenever we have leftover ham we like to
make these yummy pulled pork sandwiches.
They are so easy that I even hesitate to call it a recipe.
It is a family favorite that my mom used to make.
Here's how:
1. Cut off the fat from your ham.
2. Place the meat in the crock-pot.
3. Cook on low for several hours. The ham has enough fat and salt that you don't need to add anything with it.
4. When you are ready to eat use your fork to break the meat apart. The meat will just fall apart.
5. Add your family's favorite BBQ sauce. Place on a bun, or it also tastes great in a salad!
GG Merna's Sweet Mustard Sauce
Our family can't eat ham without making
GG Merna's Sweet Mustard Sauce.
It is so easy to make, and so yummy to eat.
I bought dry mustard for years, then once I tried bottled,
I quit using the dry.
It is just easier because we always have some on hand.
I also have tried Dijon and yellow.
Both were good.
It's as easy as 1, 2, 3!

Troy's Hot Lemon Tea
When someone from our family gets a cold,
we make a hot lemon "tea" to help them get better.
I freeze lemons into ice cubes and use them for times like these.
I have to confess that my husband puts in a lot more
honey than what is in this recipe
You can add as much as you are comfortable with.
It really does help us feel better!
GG Merna's Crock-pot Chicken Divan
GG Merna loved to have all the family over for Sunday dinner.
We will always remember a well set table and lots of food.
One of her favorite dishes was Chicken Divan.
She made hers in the oven, but we have
adapted it for the crock-pot. It turned out great!
Here it is:
Holly's Homemade Flan
The first time I ever had flan was at my
wedding shower over 30 years ago.
Being the custard lover that I am I fell in love with it.
I found a recipe in Sunset magazine and started to make it myself.
Since then I have enquired at a few of my favorite
restaurants on how they made their flan.
As a result I added the sweetened condensed milk.
On my husband's request I also caramelize a little
more sugar then the original recipe.
(He loves the caramel sauce on top.)
Here is the result:
Troy's Favorite Easy Vanilla Ice Cream
One of our favorite Sunday activities is
to make ice cream with Sunday dinner.
I bought a little Cuisinart ice cream maker
at Williams Sonoma years ago.
Luckily it came with an extra freezer container.
For Troy, the more cream and vanilla in the recipe, the better!
Alyssa's Super Easy Chocolate Ice Cream
Our family loves homemade ice cream.
This chocolate recipe is especially yummy!
We have a little Cuisinart ice cream
maker like what you can buy at Costco.
It is sooooo easy and sooooo yummy!
Troy's Amazingly Easy Guacamole
Troy wanted me to add that you should
also use salt and pepper in it.
He likes to add grab meat, or salsa.
We don't like to add lemon because it alters the flavor.
We can deal with it being a little bit brown.
Just eat it up fast,
then you won't have that problem!
It tastes great in salads, or on sandwiches.
I'm drooling as I type!
Holly's Oatmeal Chocolate Chip Cookies
Troy's favorite chocolate chip cookie is one that has oatmeal in it,
but they are really hard to find so I came up with this one.
Troy and Nathan's Coconut Curry Chicken
One of my family's favorite meals is
Coconut Curry Chicken with Mango (optional).
My husband and son just love curry,
and while we were in Australia we ate a lot of it.
When we got back home we could not find it
as easily as we did in Australia,
so I went online to find a recipe.
With a lot of tweaking, we came up with this recipe.
My husband likes more curry,
so sometimes I double the amount.
Now the entire family is hooked.
Grandma Alice's Peanut Brittle
Every Christmas my sweet Grandma Alice made a big batch of
peanut brittle and gave each family a tin full of it.
I can remember her showing me how to make it as a child.
Here is her recipe that I got from my Aunt Betsy.
No Bake Cookies
My kids love to make No Bake Cookies.
They are sooooo easy to make,
and one of dad's favorites.

My family is so spread out that I don't do it regularly
and I'm getting out of practice.
This is an idea that I did years ago.
It's so much fun to play with frozen bread!
For all of you who love fresh bread,
and love a cute little something extra at the dinner table,
here is a super easy way to make bunny bread
out of frozen uncooked bread.
I first let the dough thaw out.
Before it started to rise,
this is what I did:
1. Thaw out bread.
2. Make 2 ridges for ears.
3. Cut the ridges with clean scissors, leaving the front of the ear attached to the bread.
4. Shape the cuts into ears.
5. Pinch off a piece of the bread at the back for a tail.
6. Shape the piece into a round tail and glue back on with water.
7. Poke holes in the face for eyes. I used a metal skewer.
8. Allow bread to rise.
9. Brush with egg and water just before baking.
Serve and eat. My family loved it.

I took with a group of my walking buddies,

We all went together to learn how to make freezer meals,
and this is one of the recipes that I took home.
(I know, this recipe has nothing to do with freezer meals!)
